Ingredients

  • Ground meat200 g
  • Onion1 for the kebab, 2 for the caramelized onion3 medium

You probably have these

  • Salt½ tsp
  • Turmeric½ tsp
  • Paprika½ tsp
  • Black pepper½ tsp
  • Ground coriander½ tsp
  • Oilfor frying40 g

Method

  1. Grate one medium onion and squeeze out its juice.
  2. Put 200 g ground meat in a bowl and add the grated onion, half a teaspoon each of salt, turmeric, paprika and black pepper, and half a teaspoon of ground coriander.
  3. Knead the mixture well until all the ingredients are combined.
  4. Wrap the meat mixture around the skewers as in the picture, spreading it evenly and smoothly.
  5. If you like, put the skewers in the refrigerator for 15 minutes so the meat sets well.
  6. Heat oil in a pan and fry the kebabs.
  7. Do not move the kebabs for the first 2 to 3 minutes so they do not separate from the skewers.
  8. For the caramelized onion, choose a large pan so the onions do not pile on top of each other.
  9. Keep the heat on medium-low the whole time.
  10. Use 2 medium onions for the caramelized onion; the full details are in the video.
  11. For the tahdig, use a microwave-safe or clay dish in the center; a glass dish will break.
  12. For the first 5 minutes set the heat to medium-high, then lower it gradually.
