  • Freshly ground black pepper1/2 tsp
  • Ground turmericDo not exceed one tablespoon.1 tbsp (max)
  • Salt1 tbsp
  • Vegetable oil (sunflower or canola)For frying the herbs. At least 1 cup (2 1/2 cups is more like

Method

  1. Soak the red kidney beans for 4 hours (or use 2 cups of canned cooked beans instead).
  2. Clean the fresh herbs: remove all the wilted leaves and separate the stems, so that 1 kg of net cleaned herbs remains.
  3. Heat a heavy pan to about 160-170°C.
  4. Add oil to the hot pan: 5 to 6 tablespoons, depending on the size of the pan.
  5. Fry the herbs in several batches and in smaller portions so that they do not release water.
  6. In a heavy pan at this temperature the herbs quickly release their water and it evaporates fast, so the frying will not take long.
  7. Do not fry the herbs in a thin aluminium pan over low heat, and do not stir them too much, so that they do not turn into a herb purée.
  8. After 2-3 minutes the oil is completely absorbed; add another portion of oil.
  9. Keep a thin film of oil at the bottom of the pan at all times and adjust the amount of oil to your own need.
  10. After about 15 minutes of frying, most of the water in the herbs has been drawn out.
  11. Lower the flame to very low.
  12. At about 30 minutes the herbs begin to release the real aroma of ghormeh sabzi; if you are worried about the herbs burning, stop frying at this point.
