  • SaffronFor tahdig1

Method

  1. Wash the rice with love, without rubbing it.
  2. Add a lot of salt to the rice, because without salt it is useless.
  3. Let the rice soak for two hours.
  4. After soaking, drain the water.
  5. Pour water into another pot and bring it to a boil.
  6. Boil the rice until it is soft but its core remains firm.
  7. Drain the rice and rinse it with cold water.
  8. Pour oil and make tahdig with whatever you like; I made it with saffron.
  9. Do not forget the magic hole (make a hole in the rice).
  10. Let it steam for 45 minutes.
  11. Cook for two or three minutes on high heat, then on low heat.
  12. Abkesh rice with animal fat is something else, so heat it up.
