  • Olive oilFor drizzling over the vegetables before roasting1 bottle
  • SaltSprinkled over the vegetables before roasting1 pack

Method

  1. Arrange the tomatoes, white onion and garlic on a baking tray.
  2. Drizzle olive oil and salt over the vegetables and put the tray in the oven until they are completely soft and roasted.
  3. If you have no oven, cook the ingredients in a pan over low heat until the tomatoes soften and the aroma of garlic and onion is released.
  4. After cooking, puree everything with an electric masher or a blender until the texture of the soup is smooth.
  5. Lower the heat under the soup and let it come off the boil. Put the cream in a bowl and gradually add 2 to 3 tablespoons of the warm soup, stirring, so the cream comes to the same temperature.
  6. Slowly pour the cream mixture into the soup, stirring constantly until it is completely smooth.
  7. Finally, warm the soup over low heat, but do not let it boil, because hard boiling can spoil the texture of the cream.
